"Is my blog burning?"- Mike's favorites

So my selections aren't that exciting, but I'd mentioned to my friend that I was making meatloaf last night and she was curious what my recipe was. I got the recipe from my mom's friend a few years ago and it's one of Mike's favorites. Actually, to quote him last night, "this meatloaf isn't good for my diet, because it makes me eat too much". I've also typed out a cookie recipe that is one of Mike's favorite as well. We made this recipe today with my nieces and nephew, so I have a couople of pics (no meatloaf pics, sorry).

When she gave me the recipe it was just a "guestimate", so I just eyeball this recipe. Measurements are approximate.

1-1 1/2 lb. ground beef
1 small onion (minced)
1- 1 1/2 c. oatmeal
3/4 c. Yoshida gourmet sauce (I have a big jug from Costco, but I think you can find it at any grocery store)

Preheat oven to 350 F. Mix all of the ingredients together and form into loaf shape in bakeware. I drizzle some more Yoshida's sauce over the top. Bake for 1 hour.
This is good with cut up potatoes and carrots surrounding it as well.

CHEWY CHOCOLATE CHIP OATMEAL COOKIES

1 c. butter, softened
1 c. packed light brown sugar
1/2 c. white sugar
2 eggs
2 t. vanilla extract
1 1/4 c. all-purpose flour
1/2 t. baking soda
1 t. salt
3 c. quick oats
1 c. chopped walnuts (optional- we don't use them cuz Mike doesn't like nuts :)
1 c. semi-sweet chocolate chips

Preheat oven to 325 F.
In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
